Happy Watermelon Day!
Watermelon is wonderful on its own but here’s a yummy salad recipe I found filled with chunks of watermelon, red onion, feta cheese, & fresh mint leaves.
6 cups seedless watermelon, cut into bite size pieces
1/2 cup red onion, thinly sliced
1/2 to 1 cup crumbled Feta cheese (I like lots)
1/3 cup fresh torn mint leaves (smells so good)
Mix together in bowl. For the dressing whisk the following and add to watermelon mixture.
2 TB balsamic vinegar
1/4 cup olive oil
2 TSP Dijon mustard
2 TB honey
1 minced garlic
Add salt & pepper to taste.
